Curry paste:
4 shallots
Remove outer skin

Wrap in foil
4 large garlic heads
Remove outer skin, cut off pointy end, oil and foil
6" ginger
Peel
Slice thin
Oil and foil in single layer
350° oven, take out ginger at 15 min, the rest after another 30 min
Optional 5-20 dried chilis soaked 15 min
1 1/2 Tbsp salt
2-3 Tbsp turmeric
2-3 Tbsp curry powder
2 tsp coriander
3 Tbsp lemongrass
1/4 cup cilantro
Food process into paste
Freeze in 1/3 cup portions
Curry:
1/2 onion, sliced thin
1 lb chicken
1/3 cup curry paste
Potatoes and carrots
1 1/2 cup coconut milk
1/2 cup water
2 tsp fish sauce
2 Tbsp brown sugar
Salt
