Apple Crisp

Preheat oven to 375°F Pare, core, and side into 13"x9" pan:  8 cups tart apples Season with 2 Tbsp lemon juice Work like pastry:  2/3 cup flour  1 cup brown sugar 1/2 cup butter 2 tsp cinnamon 1/2 tsp nutmeg  2 cups oatmeal Mixture must be lightly worked so it becomes crumbly  Spread over apples. Bake about 30 minutes 

Pfeffernüsse

1/2 cup molasses (160g) 1/4 cup honey (84g) 1/2 cup butter  Melt on low, cool 2 eggs  Mix in 4 cups flour  3/4 cup sugar 1/2 cup brown sugar  2 tsp cinnamon  1 1/2 tsp baking soda  1 1/2 tsp cardamom  1 tsp allspice  1 tsp nutmeg  1 tsp cloves  1 tsp ginger  1 tsp black pepper  1/2 tsp salt  Mix, stir in gradually Chill 2 hours Roll into 1" balls, 1" apart on baking sheet  325°F oven Bake 12-15 minutes until not shiny but still soft Cool, roll in powdered sugar Age 24 hours in airtight container

Chicken Tagine

8 chicken thighs, cut up a bit 1 tsp salt 1/2 tsp minced ginger 1 tsp garlic  1 tsp cumin  1 tsp smoked paprika  Marinate, brown both sides, remove 2 Tbsp olive oil  1 onion, sliced  1 Tbsp garlic  1 Tbsp ginger  1 tsp coriander  1/2 Tbsp paprika  2 bay leaves Saute  2 cans chickpeas  1/2 cup raisins and/or other dried fruit 1 cup chicken broth 1 preserved lemon, cut up Replace chicken, cover, oven 35 minutes at 325° F

Speculoos

1/2 cup cold butter in cubes 6 Tbsp sugar  3/4 cup brown sugar  1/4 tsp baking soda  1/4 tsp salt  2 1/2 tsp cinnamon  3/4 tsp nutmeg  3/4 tsp cloves  1/2 tsp ginger  1/4 tsp white pepper  1/4 tsp black pepper  2/4 tsp cardamom  Cream until uniform 1 1/2 tsp vanilla  1 egg Beat in 1 3/4 cup flour (235g) Roll 1/4" thick Chill 1/2 hour 375° F, 9-11 minutes until brown edges

Toast Beans

1 lb navy beans 1 tsp salt 1 onion, quartered 2 tsp garlic 2 Tbsp brown sugar 3 Tbsp molasses  3 Tbsp Worcestershire sauce  3 Tbsp apple cider vinegar  2 Tbsp tomato paste  3 bay leaves  2 1/2 cups tomato sauce or puree  4 cups chicken broth (6 for stovetop)  Instant pot beans Serve on toast

Gingerbread Cookies

1 cup brown sugar  1/3 cup shortening (68g) 1 1/2 cup molasses  2/3 cup water 7 cups flour  2 tsp baking soda  2 tsp ginger  1 tsp allspice  1 tsp cinnamon  1 tsp cloves  1/2 tsp salt  Beat wet and sugar Stir in remaining Roll 1/4" thick 2" apart on cookie sheet 350°F, 10-12 minutes until no indentation when touched 

Green Enchiladas

1 shredded rotisserie chicken  1 cup sour cream 1 lb Monterey jack, grated, divided 1/2 lb mozzarella, grated 2 Tbsp taco seasoning  Mix, reserving half Monterey jack 28 oz green enchilada sauce Corn tortillas Warm sauce in skillet and tortillas in microwave Dip tortilla in sauce Place in baking dish Fill with chicken mixture Tuck edges Repeat for all chicken mixture Pour remaining sauce on top Sprinkle remaining cheese  375°F, 15 minutes

Any Cobbler

3-4 cups fruit, sliced 2 Tbsp sugar  Lemon juice, if needed Let sit 3/4 cup sugar  3/4 cup flour  2 tsp baking powder  1 tsp cinnamon or other flavor 1/4 tsp salt Mix 1 egg 3/4 c milk Whisk Melt butter in 8"x8" baking dish at 325°F Combine wet with dry, pour in dish, place fruit on top without stirring  50-60 minutes

Stir-fry

8 oz ground pork  Cook in wok on high 1 Tbsp miso 1 Tbsp garlic  1 Tbsp ginger  Add to wok and cook on medium 1 package stir fry vegetables Corn, broccoli, zucchini, etc Cook 1-2 Tbsp oyster sauce depending on salt

Jambalaya

Seasoning:  1 Tbsp garlic powder 1 Tbsp onion powder  1 Tbsp paprika  1 tsp white pepper  Mix 2 smoked sausages Slice, brown, remove 24 oz rotisserie chicken or raw Mix 1 Tbsp of seasoning cook, remove 2 onions  3 celery  2 Green bell peppers 3 tsp garlic  Cook 4 cups rice 5 cups chicken broth  Cook Add everything except green onions Cook Add green onions and extra seasoning to taste

Crunchy Cinnamon Cookies

3 Tbsp hot water 1/2 cup brown sugar  1/2 tsp baking soda in 1 Tbsp water  Dissolve, cool to warm 1/2 cup shortening (100g) 1/2 cup superfine sugar Cream in mixer Add sugar water and beat 2 cup flour  2 tsp cinnamon  2 tsp ginger  1/4 tsp salt  Whisk  Stir into mixer until dough  Add a few Tbsp of water if necessary Rest at least 2 hours  Roll 1/8" thick  Decorate with sprinkle sugar 375° F, 8-10 minutes
